Shrimp Stuffed Avocado
While I was at the grocery store, I was ecstatic to find a sugar free and carbohydrate free Thousand Island dressing. For which, I promptly placed in my cart. It must have been fate! Because, the one I picked out was absolutely delicious! Additionally, I was a surprise to find quite a few sugar free options.
Even though the web is full of homemade dressing recipes, I have yet to find one I like. Consequently, taking the sugar out of certain foods is just not that appealing to me. In truth, i’m pretty sure my sugar addiction has a lot to do with it. Not to mention what my taste-buds are accustom to! Non the less, this Shrimp Stuffed Avocado recipe turned out perfect and I was able to cut out all the extra carbs.
Of course, following a low carb diet is not a requirement to enjoy this lovely treat. Because it’s so yummy and all I do is opt for regular thousand island dressing when I have company.
Lastly, Shrimp Stuffed Avocado’s are so quick and easy to make. I usually throw them together last minute when i’m in a hurry. Also, they work well as a snack or a meal. Furthermore, shrimp Stuffed Avocados are perfect to share with friends and family! Everyone absolutely loves them! I make them all the time and I always get great reviews!
- 3 avocados
- 6 ounces peeled salad shrimp
- 1/4 cup thousand island salad dressing - Optional Sugar & Carbohydrate fee
- put your shrimp in a bowl and add thousand island dressing and mix well
- cut avocados in half and scoop out the seed leaving a well for your shrimp
- evenly put your shrimp mixture into avocado wells
- ready to serve
salt and pepper to taste
shrimp mixture can be heaping over the avocado
