Twice Baked Loaded Potatoes

Ingredients

  • 4 medium potatoes or 2 large baking potatoes
  • 3 green onions chopped (also called spring onions)
  • 4 to 5 slices of crisp bacon Chopped Fine
  • 1/4 cups sour cream
  • 2 tbsp butter
  • 1 1/3 cups grated cheese of your choice
  • salt and pepper to taste

Instructions

Pre-Heat Oven to 350° degrees

  • Microwave potatoes until softened. (you can bake if you prefer however it takes much longer)
  • Fry bacon until it's your desired crispness and chop into bits once cool.
  • while potatoes and bacon are cooking chop up green onions and anything additional you want to add.
  • Take you cooked potatoes and gently scoop out the insides into a bowl and mash with butter, sour cream and salt and pepper to taste.
  • Add 1 cup of grated cheese and half of the chopped bacon to the mashed potato.
  • Fill each of your hollowed out potatoes with the mashed mixture and place in your preheated oven for 12 to 15 minutes.
  • Remove from oven and top off with the remaining bacon, cheese and green onions.
  • Ready to serve!

Notes

This recipe serves 4 as a side or 2 as a meal. If you need larger serving you can just double the ingredients.
You can use any kind of cheese your like, I like using cheddar or Swiss.
I bake the final potato on a muffin top pan as it keeps the potato skin crisp.
